Can i use gel paste to colour white chocolate? And if so, how do i do it?
I have decided to make rainbow chocolate covered strawberries. But of course, to do this, you need rainbow coloured chocolate.
I've read that using the normal water based food colourings 'seize' your chocolate, but powders or pastes work.
I've been searching everywhere and the best i could find is a Wilton - Gel Paste Set
Can anybody please tell me if they think it will successfully colour my white chocolate?
And if it can, how do i do it properly, and how intense will the colours turn out?

Winton makes pastes for frosting and chocolate, the product you selected (from that link) is a frosting color which would be water based. Real chocolate is cocoa butter based, it's the ingredient that does not get along with water based colors.
The Winton chocolate colors are oil based are really not that bright, they are a little muted. many craft stores will carry both the chocolate and frosting colors and the packaging is the same except for the wording. A lot of craft stores also carry a fake chocolate that is much easier for home use, this fake chocolate is pre-colored (in the US it's also sold under the Winton name).

putting more than one color on a strawberry by dipping can get rough when you are after doing the whole rainbow, you might want to think of finding some cake decorations (or ice cream decorations) and apply them just after the berries are dipped : I've used these with great results: http://www.candylandcrafts.com/candy_coated_morsels.htm
